Baked Kale Chips

1 bunch (about 9 ounces) kale (Curly, Dinosaur and/or Red Russian kale)
2 tablespoon olive oil
Sea salt, to taste
Nutritional yeast, to taste
**optional- add onion powder, minced garlic scapes or 2 inch pieces of scallions before baking.

Preheat oven to 375°F. Rinse and dry the kale, then remove the stems and center ribs. Cut into large pieces, toss with olive oil in a bowl then sprinkle with salt. Arrange leaves in a single layer on a large baking sheet lined with parchment paper. Bake for 7 minutes, or until crispy. Place baking sheet on a rack to cool. Enjoy!
